TAILS is a new-concept fish restaurant on Riga’s gastronomic map. The space features two distinct areas: a classic dining room and a Raw Bar counter facing an open kitchen, where guests can watch the cooking process unfold. The culinary signature of TAILS is its dry-aging technique, where fish are aged for several days to weeks, transforming their texture and adding exceptional depth of flavor. Guided by the chef’s creative inspirations, the kitchen blends various cooking methods to showcase fish and seafood in an exciting new way.
